Good gelato doesn’t need a long list of ingredients.
Our gelato brings us one step closer to what we’ve believed from the very beginning—that the best flavor comes from the ingredients themselves, not from pre-made mixes or artificial flavors. Thanks to our collaboration with Marco Radicioni, founder of the Rome-based gelateria Otaleg and one of the most prominent figures on the contemporary Italian gelato scene, we’ve created new recipes that let high-quality ingredients shine even brighter.
The foundation is fresh, all-natural ingredients—fruit, nuts, ricotta, and other ingredients sourced from the same Italian farmers and producers whose products you’ll also find in our stores. No pre-made mixes, pastes, frozen ingredients, hydrogenated fats, or added water. The recipes are simpler, with less sugar and an emphasis on the most natural flavor possible.
The result is gelato that reflects the character of the ingredients and the season—just like in good cuisine. And that’s exactly why it doesn’t taste exactly the same every time. Strawberries, peaches, or pistachios aren’t the same every day, and we don’t try to standardize their natural character either. Sometimes they’re sweeter, other times more pronounced or aromatic. That’s precisely the magic of gelato made from real ingredients.
In addition to classic flavors like strawberry, vanilla, pistachio, and lemon, you’ll also find some less expected options here. For example, Sicilian cassata with Sardinian ricotta and candied orange, ricotta with cocoa, or a bold gelato made from Gorgonzola from mountain pastures. Our selection changes regularly depending on what’s currently at its best.
We make our gelato every day in small batches right here in Smíchov, just a few meters from where we serve it. This ensures it stays fresh. Every day, you can enjoy up to eight flavors, which we create based on the current quality and seasonality of our ingredients.
