The Michelin-non-Michelin dinner prepared by three Italians

Despite the unfavorable weather, three Italians will be arriving in Prague at the end of January: a chef, a cheesemaker, and a winemaker. All three are from the renowned food and wine region of Piedmont.

Pasquale Laera, a Michelin-starred chef, will prepare an authentic traditional Piedmontese menu inspired by ancient recipes. His dishes often feature Tino Paiolo cheeses, which we will complement with a selection of wines from third-generation winemakers from the renowned Barolo region. Pasquale studied old Piedmontese cookbooks and selected dishes that have been cooked in Piedmontese kitchens for centuries, giving them a slightly more modern twist. 

Cheeses from the Castelmagno valley are among the jewels of the Piedmontese cheese-making tradition and will be presented to you by Davide Fiandino, a second-generation cheese maker. The team will be complemented by Federico Scarzello with his exceptionally elegant wines from his truly garage winery right in the center of Barolo.

The Michelin-non-Michelin menu will be an in-depth excursion into old Piedmontese traditions presented by three friendly Italians.
