Three rebels in one room!

The three protagonists of October's dinner have something in common: they defy fashion trends and dominant tendencies, finding their own path and authenticity.

Winemaker Camilla Rossi Chauvenet defied convention by choosing the world of wine at the age of 23, even though she came from a family of lawyers who had never had anything to do with wine. She founded a winery. No one believed in her except herself. Her Amarone is among the best in the region.

Chef Tamara Zanellato, on the other hand, rebelled against gastronomic conventions. She hates the idea of sticking to standards and is constantly looking for new connections between regions, cultures, and continents—and fortunately, she knows how to handle them.

Carlo Mazzoleni, president of the Storico Ribelle consortium and cheese maturer, learned from his colleague Paolo Ciapparelli, who stood up to the Bitto DOP consortium, which wanted to classify their cheese as an industrial product. After years of litigation, they won and created a cheese that is unique in the world: Storico Ribelle, an extreme mountain cheese from Bitto. Suitable for long aging.
