Starring porchetta di Ariccia: Roman street food on the rooftop

June 23, starting at 6:30 p.m.: Roman street food, wine, and a 360° panorama on the DRN rooftop

In Rome, the word “porchetta” evokes a celebration, a festival, a party, and strong emotions. A suckling pig roasted for a long time, completely deboned and stuffed with herbs, is a traditional specialty in Rome and throughout central Italy. It is usually prepared slowly in the oven overnight and served the following day.

We reached out to one of Rome’s most renowned historic porchetta producers, which has been making it for over 50 years and possesses not only a time-tested recipe but also the expertise to select the very best suckling pig. We’ll bring a 50-kilogram piece from Rome to Prague, which we’ll sample in several different forms throughout the evening.

We’ll keep the entire evening very casual, in the spirit of Roman street food, so we can fully enjoy the terrace with its 360° view. The menu, based on traditional Roman recipes, will be prepared by native Roman Fabrizio Franco, and we’ll pair it with carefully selected wines, primarily from central and southern Italy.
